. This facility houses close custody and minimum custody male inmates. This is a certified correctional position assigned to the Food Service Department of the institution. Employees perform first-line supervisory work in large-scale food production and food service operations in a correctional facility. Work requires a dual role of custody and food production training. Employees provide supervision and custody of inmates in their assigned food preparation and food service work areas. This position oversees inmate workers engaged in a variety of activities in food production including cooking, baking, and serving of food to the inmate population. Work includes training inmates in the arts of institutional cooking, baking, and serving; maintaining standards of sanitation in all areas of the kitchen; and performing storage responsibilities. This employee is responsible for the quality of work performed by the inmates. Work is performed under the general supervision of a Correctional Food Service Supervisor and/or Manager. Minimum Education and Experience Requirements
High school or General Educational Development (GED) diploma and one year of experience in institutional food preparation and food services, in management of a commercial food service operations, as a Correctional Officer; or an equivalent combination of education and experience. Necessary Special Qualifications: Must be eligible for certification by the North Carolina Criminal Justice Educationand Training Standards Commission.
